1/3 cup Panko bread crumbs

1 egg

1/4 cup Japanese mayo (like Kewpie!)

1/8 cup chopped spring onion

1/8 cup fresh dill

1 tsp paprika or cajun

Salt & pepper (season to taste)
🔪 Instructions:
- Mix everything in a bowl.
- Shape into small patties (don’t press too hard – keep it light and fluffy).
- Heat a pan with a little oil and cook each side for 2–3 mins until golden.
- Pro tip: When you flip to the second side, drop in a small knob of butter – it helps the crust turn extra golden and adds a buttery aroma 😍
- Serve with lemon wedges or your favourite dipping sauce! (For me always Kewpie!)
