NAME: Homura Guren Blue 2 Steel

BLADE: Sakai Takayuki Blue 2 Steel, hammered by hand, which leaves textured Kurouchi finish

HANDLE: Covex grinds and burnt oak

*Guren (red lotus): This Homura series is traditionally hammer forged and hand ground double bevel knives. Gyuto features a relatively flat profile and a comfortable blade, height of 55mm. Edogata Nakiri is a vegetable knife, originally form from Edo (Tokyo area) with slightly forward oriented balance.

*Master Blacksmith, Itsuo Doi: Itsuo Doi is a third generation of  blacksmith family, following the footsteps of his father Kenjiro and his grandfather Kazuo. He became the choice of the master for Homura knives as he is known for his specialty with Hitachi Blue Steel. He is in his prime as a craftsman, widely experimenting while sharply honing his techniques.
